  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

  • 2 pounds boneless skinless chicken thighs, cut into 1-in. pieces
  • SAUCE:
  • 2 tablespoons olive oil
  • 2 tablespoons ghee
  • 1 medium onion, finely chopped
  • 1-1/2 tablespoons minced garlic
  • 1 tablespoon minced fresh gingerroot
  • 1-1/2 teaspoons ground cumin
  • 1-1/2 teaspoons garam masala
  • 1 teaspoon ground coriander
  • 1 can (14-1/2 ounces) crushed tomatoes
  • 1 teaspoon chili powder
  • 1-1/4 teaspoons salt
  • 1 cup heavy whipping cream
  • 1 tablespoon sugar
  • 1/2 teaspoon ground fenugreek, optional
  • Hot cooked basmati rice, fresh cilantro and naan, for serving
