Edamame, Corn, and Black Bean Salad

Edamame (green soybeans), corn, black beans, and garden-fresh cherry tomatoes are tossed in a cilantro-lime vinaigrette in this colorful salad that makes a nice addition to any meal.

Ingredient:

  • Vinaigrette:
  • ⅓ cup chopped fresh cilantro
  • 5 tablespoons red wine vinegar
  • 3 tablespoons grapeseed oil
  • 2 medium limes, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon white sugar
  • ¾ teaspoon salt
  • Salad:
  • 1 (1 pound) package frozen shelled edamame (green soybeans)
  • 3 cups frozen corn kernels
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 pint cherry tomatoes, quartered
  • 4 green onions, thinly sliced
