Fridge Frittata

Description

Great for a last-minute breakfast, brunch or lunch, this special frittata has a combination of crab and Swiss cheese that my guests rave about. I also like to use sausage and cheddar cheese with asparagus. —Deborah Posey, Virginia Beach, Virginia

Ingredient:

  • 6 large eggs
  • 1/3 cup chopped onion
  • 1/3 cup chopped sweet red pepper
  • 1/3 cup chopped fresh mushrooms
  • 1 tablespoon olive oil
  • 1 can (6 ounces) lump crabmeat, drained
  • 1/4 cup shredded Swiss cheese
  • 1 tablespoon minced fresh parsley, optional
