Pumpkin Black Bean Soup

Description

This is a delicious pumpkin and black bean soup that tastes even better reheated the next day. It's easy to make too! Top with a dollop of sour cream and toasted pumpkin seeds if desired.

Ingredient:

  • 3 (15 ounce) cans black beans, rinsed and drained, divided
  • 1 (16 ounce) can diced tomatoes
  • ¼ cup butter
  • 1 ¼ cups chopped onion
  • 4 cloves garlic, chopped
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 cups beef broth
  • 1 (15 ounce) can pumpkin purée
  • ½ pound cubed cooked ham
  • 3 tablespoons sherry vinegar
