Pumpkin Pecan Scones with Maple Glaze

Incredible pumpkin scones made with whole wheat flour and coconut oil, topped with maple glaze and pecans. These healthy pumpkin scones are vegan, too!

Ingredient:

  • 1 cup raw pecan halves
  • 2 cups (250 grams) white whole wheat flour or regular whole wheat flour
  • 1 tablespoon baking powder
  • ¼ cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves or allspice
  • ½ teaspoon fine salt
  • ⅓ cup solid coconut oil* or 5 tablespoons cold butter
  • ¾ cup pumpkin puree
  • ¼ cup milk of choice (almond milk, cow’s milk, etc.)
  • ½ teaspoon vanilla extract
  • 1 cup powdered sugar
  • ⅛ teaspoon fine salt
  • 1 tablespoon melted coconut oil or butter
  • ½ teaspoon vanilla extract
  • ¼ cup maple syrup, more if needed
