Quinoa with Peas and Onion

Even picky eaters will love this protein-packed dish. If you have freshly shelled peas on hand, substitute them for the frozen.

Ingredient:

  • 2 cups water
  • 1 cup quinoa, rinsed
  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • 1-1/2 cups frozen peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped walnuts
