Silky Sweet Potato Purée

Description

This sweet potato purée can be made 2 days in advance. Store in an airtight container in the refrigerator.

Ingredient:

  • 3 pounds whole sweet potatoes, pricked with a fork
  • salt and ground black pepper to taste
  • ½ cup buttermilk
  • ½ cup whole milk
  • 6 tablespoons butter, softened
