This elegant and creamy take on a sweet potato gratin is elevated with Gruyère cheese sauce made with four fresh herbs. Top with more fresh herbs before serving, if desired.

Ingredient:

  • ¾ cup heavy cream
  • ¾ cup milk
  • ¼ cup unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped fresh rosemary
  • 1 ½ teaspoons salt
  • ¾ teaspoon ground black pepper
  • 3 pounds sweet potatoes, peeled and thinly sliced
  • 1 ½ cups shredded Gruyère cheese
