White Bean and Tomato Pasta

Description

For this white bean and tomato pasta, cannellini beans are pureed with garlic, lemon juice, and olive oil to make a smooth sauce. Lightly cooked tomatoes, red pepper flakes, Parmesan cheese and penne pasta complete the dish.

Ingredient:

  • 1 (8 ounce) package penne pasta
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 2 garlic cloves, chopped
  • 1 lemon, juiced
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup shredded Parmesan cheese
  • salt and freshly ground black pepper to taste
