These coconut macaroons are the perfect sweet treat. They’re gluten free and subtly flavored with honey or maple syrup. Dip them in chocolate if you wish (I recommend it)! Recipe yields nearly 3 dozen small cookies (34 cookies, by my count).
Ingredient:
8 ounces (3 cups) unsweetened shredded coconut*
1 cup sugar
½ teaspoon ground cinnamon
3 large egg whites
3 tablespoons honey or maple syrup
2 teaspoons vanilla extract
½ teaspoon fine salt
1 cup (6 ounces) semisweet or dark chocolate chips
